So... the "only" variable are the drivers?
I would imagine you'd also have to factor in how the
car/engine/etc reacts in different temperatures...

I would say that Mercedes and Ferrari are within that 0.3 of a second, the evidence on race day seems to suggest that Renault are further behind and Honda are not even in the same zip code of Ferrari and Mercedes.
