...Swmbo is out working at a baby shower so I am baby sitting. Have an hour and then time to put the roast dinner on.

You can't ""babysit"" your own children!! :banghead:

If you have onion soup and beef broth, let me know if you're interested and I'll give you my "sure fire" recipe!! :wavey:

You are indeed right you can not babysit your own kids. It was just as I came out. Would "at home with the kids" been better.

Cool...

So... preheat your oven to 400 F

Once it's at temp, add 2 - 3 tbsp. of vegetable oil to a roasting pan and brown the meat on all sides.
Meanwhile, pour two cups of beef broth into a mixing bowl and add the onion soup mix.

When the meat is browned, add the broth/soup mix and cook until ready (usual time for whatever weight the roast is).
I usually strain the onion pieces out and then add a fresh onion to cook in the broth. You can add mushrooms, too!

Roast your vegetables together on a separate pan, together as they'll be more favourful!
My usual mix is 5 - 6 sliced carrots, 1lb of brussel sprouts, a red onion, and I'll add a clove of garlic for the last 10 minutes or so.
The vegetables are usually ready within a half hour/45 min. depending on how big they're sliced.
You can also add broccoli or cauliflower, which will take about the same time to cook as the carrots and sprouts!!

Mashed potatoes (mixed with butter and milk) are a perfect complement to this meal!!

Once the roast is cooked, slice it, pour on some the au jus gravy, saving some of it for the mashed potatoes!!

Enjoy!! :wavey:

I apologize if that sounded condescending!! It's a pet peeve of mine and I've been reminding Dads whenever I hear them say it!!

What if it's a 25 year old retard? Still baby sitting?

I have to say, I do NOT like that word :nono: and never use it myself!!
However, in the case of a special needs child/adult, the term would probably be "minding"!
