The UK police have actually had several Lambos put into police colours as well as a Lotus Exige and a Fireblade motorbike (IIRC). However, none of these are in 'standard use' policing and are used for recruitment and advertising purposes only, not every day use! Having said that, they do run some cool unmarked cars - tuned Scoobies, Evo VIIs and even a Ford Escort Cosworth.

Heh, I'm a good girl who's never been in trouble with the law
The lambos and exige have been in the press and I've seen other unmarked cars around - when they are nice, you tend to take notice I also have a nasty tendancy to watch TV crud where they cruise around in unmarked Scoobies. I guess I take more notice than most because I was toying with the idea of becoming a special copper a while back.
