Alonso is quite arrogant but it is a fact that he made Renault twice champs and after he quit you see results in there...

The concensus is that Renault's '07 chassis design was not up to par compared to the last few year's.

According to Alonso he developed the Mercedes McLaren cars. So why doesn't he go and develope the Toyota car? Or does Alonso have an ego as big as his head?

That is the $1,000,000 dollars question. MS did go to a weak Ferrari and it took them, what 5 years or so, but once they got it, they GOT it. FA is already 2X champion - like MS was at the time he moved to BigRed. He should think not only about next year, but next 10 years... if he'd manage to take Toyota to the top in next 5 years - he would be their idol, god, master of the universe, godzilla... you name it.
